The Reuben sandwich is a North American grilled sandwich composed of corned beef, Swiss cheese, sauerkraut, and Thousand Island dressing or Russian dressing, grilled between slices of rye bread. One origin story holds that Reuben Kulakofsky, a Lithuanian-born Jewish grocer from Omaha, Nebraska, asked for a sandwich made of corned beef and sauerkraut at his weekly poker game held in the Blackstone Hotel. Hotel owner Charles Schimmel's son, who worked in the kitchen, made the first Reuben for him, adding Swiss cheese and Thousand Island dressing to his order, putting the whole thing on rye bread. The sandwich first gained local fame when Schimmel put it on the Blackstone's lunch menu, and its fame spread when a former employee of the hotel won the national sandwich idea contest with the recipe.

Like many Jewish-American specialties, babka originated in Eastern Europe – Poland and Ukraine in particular – in the early 1800s. As a way to use extra challah dough, Jews would roll up the dough with cinnamon or fruit jam and bake it alongside the challah. Babka remained relatively unknown outside of Eastern Europe until the 1950s when European-style bakeries in Israel and the United States began to offer it. By the 1970s, babka had become a mainstay at Jewish bakeries in the New York area, and while it’s made its way across the country since then, it remains most popular in and around New York City.

The classic Greek baklava recipe consists of three main ingredients; filo dough, walnuts, and honey syrup. Baklava is an extra syrupy dessert that Greeks call ‘Siropiasta’. Syrupy desserts (‘Siropiasta’) are very popular in Greek cuisine. The nuts used mainly in the traditional Greek Baklava recipe are walnuts. The nuts used in the filling is the difference between the Turkish and Greek version, as the Turkish one uses pistachios. A lot of speculations abounds about the origin and history of Baklava. Greeks and Turks still argue over its origin which is claimed by both countries. A lot of historians believe that it has its roots in ancient Greece, where they made the ‘gastrin’, a dessert very similar to the current baklava.

Scones are a UK afternoon tea staple and they’re delicious served with jam and clotted cream. Scones are thought to have originated in Scotland in the early 1500s and the first known print reference was made by a Scottish poet in 1513. Scones were originally made using oats, shaped into a large round, and scored into four or six wedges. They were then griddle baked over an open fire, although today’s versions are made with flour and baked in the oven.

Bread pudding is an old dish that has been prepared since Medieval times in Europe and the Middle East. However, it is extremely beloved and defining in the cuisine of New Orleans. The dish consists of stale bread that is bathed in a combination of milk, sugar, eggs, nuts, and fruits and is then baked into a delicious dessert. It can be consumed either hot as a pudding or cold as a cake. In the past, there was a practice of hollowing out a loaf which then acted as a container for a sweet dish. There are numerous variations of bread pudding, from Egypt and Turkey to India and Malaysia. The cooks are always making new variations of the dish in Louisiana, adding white chocolate, strawberry compotes, Creole cream cheese, and caramel sauce with brown sugar and rum. Comforting and hearty, bread pudding has even been called the gumbo of New Orleans desserts.

Gyro (or gyros) consists of meat, onion, tomato and a tzatziki sauce served wrapped in a soft pita bread. In Greek, the word gyro (pronounced YEE-roh) means “turn, revolution or circle” and is a calque of the Turkish word döner, from dönmek, also meaning “turn”. Grilling a vertical spit of stacked meat slices and cutting it off as it cooks was developed in Bursa by Turks in the 19th century Ottoman Empire, and called doner kebab. Following World War II, doner kebab made with lamb was present in Athens and introduced by immigrants from Anatolia and the Middle East. A distinct Greek variation developed, often made with pork and served with tzatziki sauce, which later became known as gyros. By 1970, the gyro wrapped sandwiches were already a popular fast food in Athens, as well as in various parts of the United States. At that time, although vertical rotisseries were starting to be mass-produced in the US, the stacks of meat were still hand-made.

Ciabatta in Italian means “Slipper” due to the shape of the bread resembling one. Ciabatta bread stems from a baker in Rovigo, Veneto, Italy. The Ciabatta was invented in 1982 due to an overwhelming affinity towards French baguettes, which had taken Europe by storm. The main difference between these two loaves of bread is the hydration levels. Ciabatta is baked with a much higher hydration level, making the holes within the dough much bigger than a baguette. Ciabatta is also baked with much stronger flour, with a more delicate and sweet taste. Baguettes tend to be baked more golden brown.
